  "Leccino" Olive Patè

  Productive process

The olives  of the Leccino variety, they are harvested very ripe and healthy to give the black color to the pasta.

The olives are first sweetened, to remove from the fruit the substance responsible for the unpleasant bitter taste (protein-Oleoeuropein) , by adding only dry sea salt. A natural process that requires a lot of care, so that the salt over time  dry the olives and sweeten them.

The paste obtained through mechanical procedures immediately has a characteristic flavor of fresh, ripe olives, typical of the Leccino variety, the addition of our extra virgin olive oil completes the flavor.

A unique product with a perfect flavor, without bad aftertaste of lactic fermentation, which instead can be felt on the palate in most of those on the market, because they are processed in brine or with the addition of soda.

It does not contain preservatives, dyes and correctors.

 

Pairings:

Tomatoes, mozzarella, canapés, bruschetta, flavoring pasta dishes, stuffing for rustic mignon, preparing bread.
